I am experimenting at the moment looking for the perfect white cupcake cases for a wedding in July.
I am after cases which are thick enough to stay white whilst cooking without showing too much mixture though - this sounds easy but i am struggling to find any... This is an experiment with Dr. Oetker muffin cases bought from Tesco. As you can see a lot of the mixture shows through the cases. I am not happy with them at all for this purpose. The search continues...

Mother's Day is here! I got a wonderful card and necklace from Eloise and i decided to make my Mummy some yummy cakes.
Lemon cake is my Mum's favourite so they were lemon sponge with lemon icing. The design was a simple garden with the icing piped green and little sugar blossoms on top. A sprinkle of glitter finished them off. They would also have looked nice at easter with little piles of mini eggs stacked up and some baby chicks on the grass! You may have spotted my new favourite item the metallic cupcake cases making an appearance again! Love you Mum xx Eloise's first birthday party was the perfect excuse to make a cake! I went for a two tiered pink theme with a striped bottom tier, sugarpaste flowers and a little sparkly fairy on top.
I added 2 dozen cupcakes to the display with co-ordinating decoration. I was dissapointed with the result of the gingham check cupcake cases as the mixture showed through a lot and obsured the pattern - i will not be using them again (They were from Hobbycraft) The cake took far longer than expected resulting in a 3am finish but it looked great on the day and tasted good too! I have been asked to make cupcakes for a friend's wedding in July. The theme is vintage chic and i thought i would look online to get some inspiration.
I came across a cupcake course at Cakeology in Raynes Park, Wimbledon and the brief couldn't have been more perfect. I knew of the shop as my Dad and Brother fitted the electrics when it opened this time last year. So i decided to book onto the course and here are the results. The bride is really pleased and wants exactly the same for her wedding. Plus it was my first go at royal icing!! Hence why the piped lines are a bit splodgy!!! You can book onto courses at www.cakeology.net I have always struggled to find coloured cupcake cases which keep their colour after the baking. So i am really pleased to have found metallic cupcake cases. I have never thought to try them before but these pinky/purple cases were on sale in Hobbycraft so i thought i would try them out and i am really pleased i did. The colour looks EXACTLY the same post bake as it did before and the thick cases hold up well in the oven so you get a really nice shape cupcake. These were baked for my boss Jo's birthday and are fresh raspberry flavoured with white chocolate buttercream icing Time for Eloise to try Mummy's cakes! Esspecially made for her - raspberry cupcakes. She loved them :-)
I had 2 Halloween parties to go to this year. The first was my friend Laura's 30th do and the second was my in-laws halloween party. Not wanting to disappoint i decided to make some cupcakes. I decided to go for vanilla cupcakes with a blood (aka jam) core. I found these really cute cupcake cases and cutout decorations in Waitrose but nearly passed out when i got home and realised they had cost me £15.00! Luckily there was 2 dozen so enough for both parties. For the first party i went for orange vanilla icing and black sparkly glitter. They looked really fun. For the second party i decided to add another colour to the mix and opted for a lurid luminous green picking up on the green edging stripe on the cupcake cases. The green cupcakes were iced lemon flavoured and the orange ones were iced vanilla flavour The black glitter really popped off the green and added an extra dimension to the overall effect. Next year i think i'll try some royal icing cobwebs - if i ever get round to learning how to do royal icing!!! My baby daughter Eloise was christened a couple of weeks ago and i had saved a fruit tier of our wedding cake to re-ice as her christening cake.
I re-iced the cake with 2 layers of marzipan and white icing. I then embossed a rocking horse around the base with a patchwork cutter and dusted with pink petal dust to highlight the design. I then added cut out icing flowers between the horses and topped the cake with 3 handmade building bricks decorated in icing designs such as flowers, bunny rabbits and butteflies. For a personal touch i included my daughters, husbands and my own initals (E C A) on the bricks. To finish the display i baked 100 vanilla sponge cupcakes in bright pink striped cases and topped with a rich vanilla buttercream icing. The decorations on the cupcakes were made from icing and refelcted the designs on the building bricks. A shimmer of edible glitter finished the look. It was a great day and all the cakes were gobbled up. Big thank you to my Uncle Stu who took some fab pictures of the cakes! It has been a while since i last posted as i have had my little girl Eloise and have not had a lot of time for baking!
My NCT group love cake so i thought i would make some raspberry muffins for one of our coffee mornings. I thought i'd attempt to shift some of the baby weight by using Splenda, an alternative to sugar, in the cupcakes. The box said to subsutuite by volume not weight. So 1 cup of Splenda equals the same as 1 cup of sugar. BIG MISTAKE! They looked amazing but tasted awful, chewy and tasteless... i re-made them as i thought i'd done something wrong but no, it really does make the cakes taste bad. They were binned :-( I am expecting my first baby and my sisters in law organised a babyshower for me! My friend Yang Mei made these fantastic baby shower cupcakes - aren't they wonderful!
